To be honest, I can't think of a website I keep coming back to, just because of the lay-out...
Of course, if the website isn't practical at all, it might keep me away from it.
One I regularly come back to is an electronics page. But that's more due to the products and the service. Coolblue is the one I'm talking about. It's simple and practical. Simple colourscheme that's not distracting.
But again, the lay-out isn't the reason I keep coming back.

I enjoy more or less every Discourse forum, feels like the "way it should be".
I think classic forums like ours are a bit stiff and out of the pace of time.

Very intuitive, I can find what I need without having to search. They have been thinking a lot about email and how to improve it and that also gives me an interface that makes using email way easier.
In general I love, love the neumorphism trend. It's simple, sleek, yet has some (literal) depth to it.
I'd also say, I prefer pastel background colors over pure whites. Same for dark greys, rather than pure blacks. It's easier on the eyes and feels more cozy.
The new Android 12 update mixes both of these together; just as I got my first iPhone Q_Q
Other than TAW, my favorite website is Anandtech, a good hardware/tech review site and forum board. I also volunteer moderate there. I don't really care so much about how a website looks, just the content. I do prefer classic forums, and I stay away from sites that try to tell you what browser extensions you can or cannot run.
